EGGS FLORENTINE

Preparation:

Grease casserole.

Steam a bag of spinach (remove stems if you're fussy).
Dump the spinach into the casserole.
Crack four eggs over the spinach.
Dump cheese sauce (or hollandaise) over it.
Sprinkle on some grated cheese.
Bake, uncovered, at 350° for 1/2 hour.
